Method
-
Step 1
Cut the beef into cubes. Thickness up to 3cm, up to 4cm or 5cm for length and width is ok, depending on meat used and preference.
-
Step 2
Chop the spring onions into 4-5cm pieces.
-
Step 3
To prepare the Teriyaki Sauce, combine Soy Sauce, Mirin, and Sake in a pan and bring to a boil. Reduce to about half, this should take about 5 mins or so. The consistency you’re aiming for will be like light syrup. Be careful not to overdo it as the mixture will burn and result in a bitter mess if overdone.
-
Step 4
Place beef and spring onions on bamboo skewers.
-
Step 5
Grill the skewers over charcoal or gas, a hotplate is fine as well. For the most authentic experience use Binchotan (Japanese charcoal), which has long-lasting, high heat output.
-
Step 6
Turn several times while cooking to ensure even cooking. Baste grilled side with Teriyaki sauce. Repeat several times as you turn skewer over until cooked to taste.
