Put a Japanese spin on smoked beef ribs. Perfect for your next BBQ recipe or a weekend cooking project.

Method

  1. Step 1

Pre-heat Smoker to 275 °F/135 °C (for example Traeger Ironwood XL with Traeger Cherrywood Pellets)

  2. Step 2

Remove Beef Ribs from packaging and trim off top layer of silver skin

  3. Step 3

Apply coating of the Soy Sauce to all sides of the ribs

  4. Step 4

Apply coating of your rub of choice

  5. Step 5

Place the ribs into the smoker. This will take 9-10 hours. If you are running short on time, you can also wrap your beef in foil once the bark/rub has set, as this will help speed up the cook. However, work towards tenderness, not time, when cooking low and slow cuts.

  6. Step 6

Once your beef ribs are at 210 °F/98 °C, let them rest for at least 30 minutes. Depending on your smoker, you can set it to the ‘keep warm’ settings at 165 °F/74 °C to give you time to prepare the rest of the ingredients.

  7. Step 7

    Rinse and cook the rice.

  8. Step 8

To make the Ponzu Sauce, bring Mirin to boil to remove alcohol. Remove it from the heat, add in Bonito flakes and let steep for 10 minutes. Once the Mirin is cool, mix in the Soy Sauce and lemon or yuzu juice.

  9. Step 9

Cut the Bok Choy into quarters and drizzle them with olive oil. Grill them on a hibachi until they have a nice char on them. If you don’t have a hibachi or charcoal grill, you can use any heat source, for example prepare them in a pan or in the oven.

  10. Step 10

To plate, place a small amount of rice and one or two Bok Choy quarters into a bowl. Slice the beef ribs and place into the bowl, then drizzle with the Ponzu reduction and garnish with some sesame seeds.

  11. Step 11

    Enjoy!
